Yet a new report suggests that the greatest threat to food and nutrition security may not be a shortage of technological innovation. Instead, it may be a shortage of people equipped to apply that innovation effectively.<\/p>\n<p class=\"wp-block-paragraph\">A new white paper from the <strong>Institute of Food Technologists (IFT)<\/strong>, titled <em>Building a Future-Ready Science Workforce to Address Food and Nutrition Security Challenges<\/em>, argues that the food sector faces significant workforce preparedness gaps at precisely the moment when expertise is needed most. The report identifies deficiencies in areas including artificial intelligence (AI), policy literacy, systems thinking and science communication, while also highlighting a decline in individuals entering food-related professions over the past decade.<\/p>\n<p class=\"wp-block-paragraph\">Food security is increasingly a global concern. The challenge is no longer simply producing sufficient calories. Modern food systems must also ensure safety, nutrition, affordability, sustainability and resilience. Meeting these goals requires highly trained professionals capable of navigating complex scientific, technical and regulatory environments.<\/p>\n<p class=\"wp-block-paragraph\">According to the IFT white paper, future food scientists will require a broader set of skills than previous generations. Traditional expertise in microbiology, chemistry, food engineering and nutrition remains essential, but professionals must increasingly understand emerging technologies, data science, regulatory frameworks and public communication. This reflects the growing complexity of food systems.<\/p>\n<p class=\"wp-block-paragraph\">For example, an AI-driven food manufacturing process may involve software developers, process engineers, microbiologists, data analysts and regulatory specialists. Success depends not only on technological capability but also on the workforce\u2019s ability to integrate expertise across disciplines.<\/p>\n<h2 id=\"h-why-ai-matters\" class=\"wp-block-heading\"><strong>Why AI matters<\/strong><\/h2>\n<p class=\"wp-block-paragraph\">The report\u2019s emphasis on AI is particularly notable. Artificial intelligence is already being deployed throughout the food sector in applications ranging from supply chain optimisation and crop monitoring to food safety surveillance and manufacturing process control. AI can analyse vast datasets, identify trends and support decision-making at speeds that would be impossible using conventional approaches. However, implementing AI effectively requires workers who understand both the technology and the underlying scientific context.<\/p>\n<p class=\"wp-block-paragraph\">This creates a significant challenge. While AI adoption is accelerating, many educational programmes have yet to fully integrate data science and machine learning into food science curricula. The result is a skills gap that could hinder the industry\u2019s ability to deploy new technologies safely and effectively. The situation mirrors challenges emerging in other sectors, including pharmaceutical manufacturing and healthcare, where organisations increasingly recognise that workforce development must accompany technological adoption.<\/p>\n<p class=\"wp-block-paragraph\">Another key finding from the report concerns \u201csystems thinking.\u201d Food systems operate as interconnected networks that encompass agriculture, logistics, manufacturing, retail, regulation and public health. Changes in one part of the system can have unexpected consequences elsewhere.<\/p>\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p class=\"wp-block-paragraph\"><em>Systems thinking is a way to understand complex problems by looking at the whole system and the relationships between its parts, rather than just looking at isolated pieces. It focuses on patterns, feedback loops, and how a change in one area can cause unintended effects in another.<\/em><\/p>\n<\/blockquote>\n<p class=\"wp-block-paragraph\">Consider climate change:\u00a0 A drought may reduce crop yields in one region, affecting ingredient availability, commodity prices, transportation networks and ultimately consumer purchasing patterns. Responding effectively requires professionals who can understand the broader system rather than focusing exclusively on isolated components. Systems thinking is therefore becoming an increasingly important competency for future food professionals. Organisations need people capable of evaluating problems holistically and identifying solutions that consider environmental, economic and social factors simultaneously.<\/p>\n<p class=\"wp-block-paragraph\">Science communication emerged as another important area of concern. In an age of social media and misinformation, food-related issues can quickly become controversial. Public debates surrounding ultra-processed foods, genetically modified crops, food additives, sustainability claims and novel proteins illustrate how scientific complexity can become difficult to communicate effectively. Food scientists increasingly find themselves working not only as technical experts but also as communicators. The ability to explain evidence-based findings clearly to policymakers, regulators, journalists and consumers is becoming a professional necessity rather than an optional skill. IFT\u2019s recently released <em>Compensation and Career Path Report<\/em> examines employment patterns across food science professions, including industry, academia, government and non-profit organisations. The report provides insight into compensation trends, job satisfaction and workforce demographics, offering a picture of how careers in food science are evolving.<\/p>\n<p class=\"wp-block-paragraph\">Importantly, workforce availability represents more than a human resources issue. It directly affects organisational resilience. A shortage of qualified food scientists can influence research capacity, product development timelines, regulatory compliance, food safety oversight and innovation. As pressures on food systems increase, workforce limitations may become more visible.<\/p>\n<p class=\"wp-block-paragraph\">The challenge is therefore not simply attracting more people to food science careers. It is ensuring that future professionals possess the skills required for an increasingly data-driven and interconnected world. For instance, educational institutions may need to adapt curricula to include artificial intelligence and data analytics and systems thinking methodologies.<\/p>\n<p class=\"wp-block-paragraph\">Many employers are investing in professional development programmes designed to upskill existing employees in areas such as digital technology, analytics and emerging regulatory requirements. Continuous learning is becoming increasingly important because technological and regulatory landscapes continue to evolve rapidly.<\/p>\n<p class=\"wp-block-paragraph\">The IFT report offers an important reminder that innovation alone cannot solve future food security challenges. The global food system will undoubtedly continue to benefit from advances in AI, automation, biotechnology and digital transformation.
